If I’m just using the Mini Dock as a nice desk gadget, can I power it from another power source? What level of power would be sufficient here?

If you don’t use the docking function of Mini Dock, you can use a 5V/2A adapter to make it work properly.
It should be noted that it can only be used as a system power supply, and other interface functions will not be used. Its phone or computer displays a charging icon, but no input current exists.
